Rice and noodles are common bases for many Thai meals, however lettuce can be used as a lower-carb alternative. Check out the recipe below for how to make this easy swap!
Ingredients
For the filling:
- 1 ½ lbs lean ground chicken or turkey
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 1 tbsp olive oil
- 1 red bell pepper, diced
- 1 cup shredded carrots
- 1/3 cup dry roasted peanuts, chopped
- 5 Green onions, sliced
- 1/3 cup chopped cilantro
- Lettuce leaves (iceberg, romaine or butter)
For the sauce:
- ¼ cup soy sauce or coconut aminos
- 1 ¼ cup water
- 2 tbsp honey
- ¼ tsp garlic powder or minced garlic
- ½ tsp ginger (optional)
- ¼ tsp chili paste (optional, for more spice)
- 2 tbsp cornstarch
Instructions
- Cook the ground meat, minced garlic and minced ginger in a pan with olive oil until meat is cooked through.
- While the meat is cooking, mix together all ingredients for sauce in a small bowl.
- Add meat to bowl with red bell pepper, carrots, peanuts, green onion and half the cilantro to create filling.
- Add filling to lettuce leaves.
- Top with extra cilantro and enjoy!
