Sweet potatoes are a delicious fall vegetable that can be made into the perfect holiday side dish. Sweet potatoes are nutritious, packing a good amount of vitamin A, vitamin C, and manganese into each serving. They also have anti-inflammatory properties and may promote immune function and gut health. Below is a delicious and easy five-ingredient maple sweet potato recipe for the holidays!
Ingredients
- Two and a half (2½) pounds sweet potatoes, peeled and cut into one and a half (1½)-inch pieces
- One-third (⅓ ) cup pure maple syrup
- Two (2) tablespoons butter, melted
- One (1) tablespoon lemon juice
- Half (½) teaspoon salt
- Freshly ground pepper, to taste
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Arrange sweet potatoes in an even layer in a 9-by-13 baking dish.
- Combine maple syrup, butter, lemon juice, salt, and pepper in a small bowl. Pour the mixture over the sweet potatoes and toss to coat.
- Cover and bake the sweet potatoes for 15 minutes. Uncover, stir, and cook, stirring every 15 minutes, until tender and starting to brown, about 45 to 50 minutes more.
